Pudalangai Kadugu Pachadi


Pudalangai / Snake Gourd
Pudalangai (Snake Gourd) – 1 cup, finely chopped
Mustard Seeds – 1/2 tsp + 1 tsp
Turmeric Powder – a pinch
Green Chilli – 1, chopped
Coconut – 1 tsp, grated
Coriander Leaves – 1/2 cup, chopped
Asafoetida Powder – a pinch
Urad Dal – 1/2 tsp
Oil – 1/2 tsp
Curd – 1 cup, whisked
Salt as per taste

1. Boil the pudalangai with turmeric powder and salt.
2. Grind together 1/2 tsp mustard seeds, green chillies, coconut and coriander leaves.
3. Add the cooked pudalangai and mix well.
4. Add curd and mix well.
5. Heat oil in a pan.
6. Fry the mustard seeds, urad dal and asafoetida powder.
7. Pour this over the pachadi.
8. Serve.
