kovakkai curry - Kovakkai Curry
Ingredients:
Kovakkai – 1 cup, chopped
Dry Red Chillies – 1
Mustard Seeds – 1/2 tsp
Urad Dal – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Oil – 1/2 tsp
Turmeric Powder – a pinch
Salt as per taste

Method:
1. Heat oil in a pan over medium flame.
2. Add mustard seeds, urad dal and red chillies.
3. Stir-fry for a minute.
4. Add the kovakkai, turmeric powder and salt.
5. Mix well.
6. Cover with a lid for 5 minutes.
7. Add red chilli powder and cover again for another 5 to 10 minutes.
8. Stir well and remove to a serving dish.
9. Serve with rice.
