Stir-fried Brinjal Recipe

Stir-fried Brinjal
Ingredients:
Eggplants (Brinjals) – 250 gms, cut into small pieces
Oil – 50 ml
Red Chillies – 2, small, finely chopped
Garlic – 2 cloves, small, crushed
Water – 1 cup
Dark Soy Sauce – 2 tblsp
Sugar – 1/2 tblsp

Method:
1. Heat oil in a pan.
2. Add the garlic and red chillies.
3. Fry for 15 to 20 seconds and remove.
4. Add the eggplants to the pan and stir-fry for 3 to 4 minutes.
5. Gently add 1/2 cup of water, stirring all the time.
6. Cook till the eggplant is soft.
7. Now add the soy sauce, sugar and the remaining water.
8. Cover the pan with a lid and cook for a minute more.
9. Remove the lid and cook till all water has been absorbed.
10. Add the reserved garlic and chilli.
11. Stir-fry for 30 seconds.
12. Serve.
