Sindhi Biryani

Sindhi Biryani
Ingredients:
Mutton – 500 gms, boneless, cubed
Plain Yogurt – 50 gms
Onions – 2, small, finely sliced
Green Chillies – 2, finely sliced + 1, whole
Potatoes – 2, small, boiled, halved
Basmati Rice – 250 gms, soaked
Saffron Strands – 1/2 tblsp, soaked in 2 tsp milk
Tomatoes – 2, small, cut into wedges
Coriander Leaves – 1/2 bunch, chopped
Mint Leaves – 1/2 bunch, chopped
Ginger – 2 tblsp, grated
Garlic – 1/2 tblsp, crushed
Red Chilli Powder – 1/2 tblsp
Turmeric Powder – 1 tsp
Paprika – 1 tsp
Coriander Powder – 1/2 tblsp
CUmin Powder – 1 tsp
Cumin Seeds – 1 tsp
Cloves – 5
Cinnamon – 2 one inch sticks
Green Cardamoms – 6 to 7
Brown Cardamoms – 1 to 2
Bay Leaves – 2 to 3
Dried Plums – 5
Salt as per taste
Black Pepper Powder as per taste
Oil as required
Walnuts – 2 tsp
Almonds – 2 tsp, slivered
Sultanas – 2 tsp
Cashewnuts – 2 tsp
Fried Onion Rings to garnish

Method:
1. Heat a little oil in a pan.
2. Saute the onions until golden brown.
3. Add the mutton pieces and fry for 4 to 5 minutes.
4. Now add the ginger and garlic.
5. After a minute, add the yogurt, ground masalas, whole spices (reserve 3 to 4 green cardamoms), bay leaves, plums, salt and pepper powder.
6. Add the whole green chilli and pour 1/2 to 3/4 cup of water.
7. Cover the pan with a lid and simmer for 30 to 60 minutes.
8. Wash the basmati rice and drain excess water.
9. Add the reserved green cardamoms and cook till fluffy.
10. Transfer half of the rice to a bowl and mix with the saffron milk.
11. In a bowl, mix the tomatoes, coriander leaves, mint leaves and chopped green chillies.
12. Add some of this to the mutton mixture and cook for an additional 10 minutes.
13. Spoon over half of the plain rice onto a large serving dish.
14. Layer this with the mutton mixture followed by the saffron mixed rice.
15. Spread the remaining tomato mixture and potatoes.
16. Add the plain rice on top followed by the saffron rice.
17. Sprinkle the fried onions, sultanas, cashews, almonds and walnuts.
18. Cover and place over low flame for 3 to 4 minutes.
19. Remove and serve at once.
