Ingredients:
Yellow Capsicum – 1, small, quartered, sliced, seeds removed
Cucumber – 1, small, quartered, seeds removed, sliced
Green Chillies – 1, seeded, shredded
Tomato – 1, skinned, diced
Purple Onion – 1/2, medium, peeled, diced
Radishes – 3, sliced
Parsley – 1/2 cup, chopped
Dill – 1 tblsp, chopped
Baby Cos Lettuce – 1/2, shredded
Juice of 1/4 Lemon
Extra-Virgin Olive Oil – 1 tblsp
Sea Salt
Black Pepper Powder
Feta Cheese – crumbled (optional)
Method:
1. Combine all the ingredients in a large bowl.
2. Toss well.
3. Sprinkle salt and pepper powder.
4. Serve at once.
