Cucumber Mor Kootu


Cucumber – 1 cup, chopped
Urad Dal – 2 tsp, dry roasted
Asafoetida Powder – a pinch
Mustard Seeds – 1/4 tsp
Green Chillies – 4
Buttermilk – 1 cup, thick
Coconut – 4 to 5 tsp, grated
Oil – 1 tsp
Salt as per taste

1. Grind together the urad dal, green chillies and coconut.
2. Boil the cucumber pieces in water with little salt.
3. Drain excess water and combine with the ground ingredients. Then simmer for 2 to 3 minutes.
4. Remove and mix with the buttermilk.
5. Heat oil in a pan.
6. Fry the mustard seeds and asafoetida powder.
7. Pour over the kootu.
8. Serve hot with rice.
