White Pumpkin
Ingredients:
White Pumpkin – 250 gms, chopped
Black Peppercorns – 4
Dry Red Chillies – 2
Coconut – 2 tsp, grated
Coriander Seeds – 1 tsp
Turmeric Powder – little
Tamarind Extract – 3 to 4 tblsp
Oil – 2 tsp
Cumin Seeds – 1/2 tsp
Salt – as per taste

Method:
1. Add turmeric powder to the pumpkin pieces and toss well.
2. Boil the pumpkin pieces and keep aside.
3. Heat 1 tsp oil in a pan over medium flame.
4. Fry the coriander seeds, peppercorns, red chillies and coconut.
5. Remove and cool.
6. Then grind to a powder.
7. Add tamarind extract to the boiled pumpkins.
8. Add salt and ground powder.
9. Transfer to a pan and simmer for 2 minutes.
10. Fry the cumin seeds in 1 tsp oil and pour over the pumpkin.
11. Serve hot with rice.
