Mango Maa Inji Pickle Recipe

Raw Mango
Raw Mango – 1, medium, chopped
Maa Inji (Mango Ginger) – 50 gms, peeled, finely chopped
Red Chilli Powder – 3 tblsp
Salt – 1 tblsp, powdered
Asafoetida Powder – 1 tsp
Gingelly Oil – 150 ml
Mustard Seeds – 1 tsp
Fenugreek Seeds – 1 tsp
Turmeric Powder – 1/4 tsp

1. Mix the chopped mango and maa inji in a jar.
2. Add salt, red chilli powder and mix well.
3. Heat oil in a pan.
4. Fry mustard seeds, fenugreek seeds, turmeric powder and asafoetida powder.
5. Pour this into the jar and mix well.
6. Cover and keep aside for 2 hours before using.
