Mango Ginger (Mangai Inji) Pickle

Mango Ginger (Mangai Inji)
Ingredients:
Mango Ginger (Mangai Inji) – 50 gms, peeled, washed, dried, finely chopped
Green Chillies – 2, slit lengthwise
Juice of 1/2 Lemon
Sea Salt – 1 tsp, powdered
Mustard Seeds – 1 tsp
Gingelly Oil – 2 tblsp

Method:
1. Add salt to the mangai inji and mix well.
2. Heat oil in a small pan.
3. Fry the mustard seeds and green chillies for a minute.
4. Add this to the mango ginger and mix.
5. Add lemon juice and stir to mix well.
6. Store in an airtight container.
7. Use as desired.
