Ingredients:
Peerkangai (ridge gourd) – 500 gms, peeled, chopped
Tamarind Extract- 1/2 to 1 cup (as required)
Green Chillies – 3
Small Onions – 10, chopped
Mustard Seeds – 1 tsp
Red Chilli Powder – 1 tsp
Coriander Powder – 1/2 tsp
Turmeric Powder – 1/4 tsp
Pepper Powder – 1/4 tsp
Cumin Powder – 1/4 tsp
Gingelly Oil – 1 tblsp
Salt as per taste
Method:
1. Mix the chopped peerkangai, salt, turmeric powder and green chillies in a bowl.
2. Pressure cook till 1 whistle and mash well.
3. Heat oil in a pan.
4. Fry the mustard seeds and onions for a minute.
5. Pour the tamarind extract.
6. Add chilli powder, coriander powder, pepper powder and cumin powder.
7. Bring to a boil.
8. Remove and serve hot with rice.
