Vegetable Sabudana


Javvarisi (Sago) – 1/4 kg
Capsicum – 1 cup, finely chopped
Onion – 2, big, finely chopped
Peanuts – 1 cup, roasted and powdered
Carrot – 1 cup, grated
Mustard Seeds – 1 tsp
Roasted Gram – 2 tsp
Ginger – 1/2 inch piece, peeled, finely chopped
Curry Leaves – few
Coriander Leaves – few
Ghee – 100 ml
Lemon Juice – 2 tsp
Salt as per taste

1. Soak the sago in water for 30 minutes.
2. Heat little ghee in a pan.
3. Fry the mustard seeds, roasted gram and ginger for a minute.
4. Add onions, carrot and capsicum.
5. Stir-fry for a minute and add the sago.
6. Add salt, remaining ghee and stir to mix well.
7. Add curry leaves and coriander leaves.
8. Cook for a minute.
9. Add peanut powder, lemon juice and stir.
10. Remove and serve hot.
