Ingredients

  • 500 gms Squid (cleaned, body cut into rings, and tentacles left whole)
  • 1/2 tbsp Spring Onions (chopped)
  • 1 Onion (finely sliced)
  • 1/2 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1/2 tsp Fennel Seeds
  • 1/2 tsp Coriander Seeds
  • 1 tsp Soy Sauce
  • 1 tblsp Oil
  • A few Curry Leaves
  • 2 cloves Garlic (crushed)
  • 1 tblsp Ginger (minced)
  • 1/4 cup Coconut Milk
  • 1 to 2 tblsp Lime Juice
  • Salt (as per taste)

Instructions

  • Heat a small frying pan and dry roast the cumin, coriander, and fennel seeds for about a minute. Grind them into a fine powder and transfer them to a large bowl.
  • Add red chilli powder, soy sauce, and spring onions to the spice mixture. Mix until well combined.
  • Heat oil in a heavy pan over medium flame.
  • Sauté the sliced onions until they turn lightly brown.
  • Add ginger, garlic, curry leaves, and the marinated Squid. Stir-fry for about 30 seconds.
  • Pour in the coconut milk and bring it to a boil.
  • Season with salt and lime juice.
  • Stir well and transfer to a serving dish.
