Ingredients:
Brinjals – 6, chopped
Drumstick – 1, cut into 1 inch pieces
Green Peas – 1 cup
Onion – 1, big, chopped
Tomato – 2, finely chopped
Coconut -2 tsp, grated
Mustard Seeds – 1/2 tsp
Turmeric Powder – 1/4 tsp
Red Chilli Powder – 1/4 tsp
Oil as required
Salt as per taste
Method:
1. Heat oil in a pan over medium flame.
2. Fry the mustard seeds till it starts to splutter.
3. Add onions, brinjals, drumsticks, green peas, turmeric powder, red chilli powder and salt.
4. Stir to mix well and cook for 3 to 4 minutes.
5. Add the tomatoes and pour 1/4 cup of water.
6. Simmer till the vegetables becomes tender and water has almost dried up.
7. Garnish with grated coconut.
8. Serve hot with rice.
