Tomato Ghee Rice Recipe

Basmati Rice – 1 cup, washed
Onion – 1, finely chopped
Tomato – 1, finely chopped
Green Chillies – 3
Ginger Garlic Paste – 2 tsp
Cinnamon – 1/2 inch piece
Cloves – 2
Cardamoms – 2
Cashewnuts – 5
Almonds – 5
Coconut Milk – 1 cup
Ghee as required
Salt as per taste

1. Add ghee to a pressure pan.
2. Fry cardamoms, cinnamon, cloves, cashewnuts and almonds for a minute.
3. Add onions, green chillies and tomatoes.
4. Stir-fry and add ginger garlic paste and salt.
5. Add the rice, coconut milk and 1 cup of water.
6. Pressure cook till 3 whistles.
7. Transfer to a serving dish.
8. Add some ghee on top and stir to mix well.
9. Serve hot.
