Mulai Payaru (Sprouted Green Gram) Rice

Sprouted Green Gram / Mulai Payaru
Rice – 1 cup, cooked
Green Gram – 1/2 cup, sprouted
Spring Onions – 1 bunch, finely chopped
Onion – 1, finely chopped
Ginger – 1/2 inch piece
Green Chillies – 4
Pepper Powder – 1/2 tsp
Capsicum – 1/2 big or 1 small, finely chopped
Cabbage – 1/4 cup, finely chopped
Lemon – 1/2
Oil as required
Salt as per taste

1. Grind the green chillies and ginger together. Keep aside.
2. Heat oil in a pan over medium flame.
3. Add the ginger green chilli paste, spring onions, onion, capsicum, cabbage and sprouted grams.
4. Saute well for 2 to 3 minutes.
5. Add salt, pepper powder, rice and mix well.
6. Stir-fry for a minute or two.
7. Remove and transfer to a big bowl.
8. Add the lemon juice and give it a quick stir.
9. Serve warm.
