Ingredients:
Chicken Thighs – 3 to 4, slightly scored
Cucumber – 1, small, cut into wedges
White Peppercorn Powder – 1/2 tblsp
Green Chillies – 2
Coriander Stems – 1 tblsp, minced
Lemongrass – 1 stalk, finely sliced
Thai Sweet Chilli Sauce – 1/4 cup
Light Brown Sugar – 1 tblsp
Fish Sauce – 1 1/2 tblsp
Method:
1. Combine the lemongrass, coriander, green chillies and peppercorns to make a coarse paste.
2. Add brown sugar and fish sauce.
3. Stir well till the sugar dissolves completely.
4. Marinate the chicken in this mixture for an hour or overnight.
5. Grill the chicken in a preheated grill till cooked through and golden brown.
6. Transfer to a serving plate.
7. Serve with cucumber wedges and Thai sweet chilli sauce.
