Ingredients:
Bittersweet Chocolate – 1/2 cup, finely chopped, melted
Eggs – 2, large, separated
Espresso – 1/4 cup
Heavy Cream – 1/3 cup
Sugar – 1 tsp
Whipped Cream for garnishing
Method:
1. Beat the egg yolks and sugar till pale yellow.
2. Add the melted chocolate and espresso.
3. Mix well.
4. In a separate bowl, beat the cream till stiff peaks form.
5. Add this to the chocolate and mix.
6. Beat the egg whites till stiff peaks form.
7. Add this to the chocolate and mix thoroughly.
8. Spoon the chocolate mousse into dessert bowls and keep in the fridge for 4 hours.
9. Garnish with whipped cream.
10. Serve.
