- Carrots – 450 gms, cut into thin strips
- Parsley – 2 to 3 tblsp, chopped
- Garlic – 1 clove, crushed
- Groundnut Oil – 2 tblsp
- Grated Rind and Juice of 1 Orange
- Black Pepper Powder
- Rub the garlic on a bowl and leave it in.
- Add the orange rind and juice along with salt and pepper.
- Add the groundnut oil and whisk until fully blended.
- Remove the garlic and discard.
- Add the carrots and 1 tblsp of parsley.
- Toss to mix well.
- Garnish with the remaining parsley.
