Carrot and Parsley Salad Recipe

  • Carrots – 450 gms, cut into thin strips
  • Parsley – 2 to 3 tblsp, chopped
  • Garlic – 1 clove, crushed
  • Groundnut Oil – 2 tblsp
  • Grated Rind and Juice of 1 Orange
  • Salt
  • Black Pepper Powder


  1. Rub the garlic on a bowl and leave it in.
  2. Add the orange rind and juice along with salt and pepper.
  3. Add the groundnut oil and whisk until fully blended.
  4. Remove the garlic and discard.
  5. Add the carrots and 1 tblsp of parsley.
  6. Toss to mix well.
  7. Garnish with the remaining parsley.
  8. Serve.
