Fig, Orange and Prosciutto Salad

Ingredients:

  • Figs – 6, cut into thick slices
  • Oranges – 2, peeled, segmented, juice reserved
  • Prosciutto – 6 slices
  • Rocket Leaves – 125 gms
  • Red Wine Vinegar – 1 tblsp
  • Light Olive Oil – 1/4 cup
  • Clear Honey – 1 tsp
  • Red Chilli – 1/2 tsp, chopped
  • Parmesan – shaved

Method:

  1. Place the prosciutto slices on an oven tray and grill until crisp.
  2. Keep aside to cool.
  3. Spread rocket leaves over a serving platter.
  4. Scatter the orange segments on top.
  5. Arrange the sliced figs.
  6. Whisk together the vinegar, 1 tblsp of the orange juice, olive oil, honey and chilli.
  7. Drizzle this over the salad.
  8. Crumble the prosciutto over the salad.
  9. Garnish with parmesan cheese.
  10. Serve.
