Ingredients:
- Figs – 6, cut into thick slices
- Oranges – 2, peeled, segmented, juice reserved
- Prosciutto – 6 slices
- Rocket Leaves – 125 gms
- Red Wine Vinegar – 1 tblsp
- Light Olive Oil – 1/4 cup
- Clear Honey – 1 tsp
- Red Chilli – 1/2 tsp, chopped
- Parmesan – shaved
Method:
- Place the prosciutto slices on an oven tray and grill until crisp.
- Keep aside to cool.
- Spread rocket leaves over a serving platter.
- Scatter the orange segments on top.
- Arrange the sliced figs.
- Whisk together the vinegar, 1 tblsp of the orange juice, olive oil, honey and chilli.
- Drizzle this over the salad.
- Crumble the prosciutto over the salad.
- Garnish with parmesan cheese.
- Serve.
