Festive Melon Salad Recipe

  • Rock Melon – 1/2
  • Honeydew Melon – 1/2
  • Pink Watermelon – 1 wedge
  • Mango – 1
  • Lychees – 450 gms (canned)
  • Lychee Liqueur
  • Juice of 2 Limes
  • Mint Sprigs – for garnish


  1. Peel the rock melon and honeydew melon.
  2. Scoop out the seeds and cut into large chunks.
  3. Trim the skin and white rind from the watermelon wedge.
  4. Cut the flesh into chunks.
  5. Peel the mango and cut the flesh into chunks.
  6. Drain lychees and reserve the liquid.
  7. Combine the melon, mango and lychees in a big bowl.
  8. Mix the reserved liquid with liqueur and lime juice.
  9. Pour this over the salad.
  10. Cover and chill for 20 minutes.
  11. Garnish with mint sprigs before serving.
