Ingredients:
- Pasta – 250 gms (penne or macaroni or any other pasta variety)
- Rocket Pesto – 1/2 cup
- Olive Oil – 1 1/2 tblsp
- Mayonnaise – 1 1/2 tblsp
- Roast Chicken – 1 1/2 cups, diced
- Spring Onions – 4, chopped
- Sun-dried Tomatoes – 50 gms, chopped
- Baby Spinach Leaves – 50 gms
- Black Pepper Powder
Method:
- Cook the pasta in salted boiling water for 10 to 12 minutes.
- Drain and transfer to a bowl.
- Add the pesto and olive oil.
- Keep aside for 10 minutes to cool.
- Once cooled, add the chicken, spring onions, tomatoes and spinach leaves.
- Add the mayonnaise and mix well.
- Add salt and pepper.
- Serve.
