Pasta Salad with Roast Chicken

Ingredients:

  • Pasta – 250 gms (penne or macaroni or any other pasta variety)
  • Rocket Pesto – 1/2 cup
  • Olive Oil – 1 1/2 tblsp
  • Mayonnaise – 1 1/2 tblsp
  • Roast Chicken – 1 1/2 cups, diced
  • Spring Onions – 4, chopped
  • Sun-dried Tomatoes – 50 gms, chopped
  • Baby Spinach Leaves – 50 gms
  • Black Pepper Powder

Method:

  1. Cook the pasta in salted boiling water for 10 to 12 minutes.
  2. Drain and transfer to a bowl.
  3. Add the pesto and olive oil.
  4. Keep aside for 10 minutes to cool.
  5. Once cooled, add the chicken, spring onions, tomatoes and spinach leaves.
  6. Add the mayonnaise and mix well.
  7. Add salt and pepper.
  8. Serve.
