Ingredients:
- Bean Sprouts – 3 cups
- Chinese Cabbage – 150 gms, finely shredded
- Salad Onion – 1, finely sliced
- Coriander Leaves – 3 tblsp, chopped
- Coconut – 3 tblsp, flaked
- Ginger – 2 tsp, grated
- Red Chilli – 1/2, deseeded and finely shredded
- Crisp Noodles – 50 gms
For the Dressing:
- Rice Vinegar – 1 tblsp
- Peanut Oil – 1/4 cup
- Clear Honey – 2 tsp
- Garlic – 1 tsp, crushed
- Salt as per taste
Method:
- Blanch the bean sprouts in boiling water for 20 seconds.
- Drain and refresh in iced water.
- Drain again and mix with cabbage, onion, herbs, coconut, ginger and chilli.
- Whisk all the dressing ingredients together.
- Toss the salad with the dressing.
- Just before serving, add the crisp noodles.
