Bean Sprout and Cabbage Salad

Ingredients:

  • Bean Sprouts – 3 cups
  • Chinese Cabbage – 150 gms, finely shredded
  • Salad Onion – 1, finely sliced
  • Coriander Leaves – 3 tblsp, chopped
  • Coconut – 3 tblsp, flaked
  • Ginger – 2 tsp, grated
  • Red Chilli – 1/2, deseeded and finely shredded
  • Crisp Noodles – 50 gms

For the Dressing:

  • Rice Vinegar – 1 tblsp
  • Peanut Oil – 1/4 cup
  • Clear Honey – 2 tsp
  • Garlic – 1 tsp, crushed
  • Salt as per taste

Method:

  1. Blanch the bean sprouts in boiling water for 20 seconds.
  2. Drain and refresh in iced water.
  3. Drain again and mix with cabbage, onion, herbs, coconut, ginger and chilli.
  4. Whisk all the dressing ingredients together.
  5. Toss the salad with the dressing.
  6. Just before serving, add the crisp noodles.
