Ingredients:
- Cold Roast Turkey – 300 gms, shredded
- Spring Onion – 1, chopped
- Avocado – 1, large, cubed
- Wild Rocket Leaves – 100 gms
For the Dressing:
- Cranberry Jelly – 1/4 cup
- Fresh Lemon Juice – 2 tblsp
- Honey – 1 tsp
- Sweet Chilli Sauce – 1 tsp
- Light Olive Oil – 1 tblsp
Method:
- To make the dressing, whisk together all the dressing ingredients.
- In a bowl, mix the turkey, spring onion and avocado.
- Gently stir in the dressing.
- Arrange rocket leaves on a platter.
- Pile the salad on top and serve.
