Turkey Salad with Cranberry Dressing Recipe

  • Cold Roast Turkey – 300 gms, shredded
  • Spring Onion – 1, chopped
  • Avocado – 1, large, cubed
  • Wild Rocket Leaves – 100 gms

For the Dressing:

  • Cranberry Jelly – 1/4 cup
  • Fresh Lemon Juice – 2 tblsp
  • Honey – 1 tsp
  • Sweet Chilli Sauce – 1 tsp
  • Light Olive Oil – 1 tblsp


  1. To make the dressing, whisk together all the dressing ingredients.
  2. In a bowl, mix the turkey, spring onion and avocado.
  3. Gently stir in the dressing.
  4. Arrange rocket leaves on a platter.
  5. Pile the salad on top and serve.
