Ingredients:
- Cold Roast Pork or Chinese Barbecued Pork – 350 gms
- Rock Melon – 1/4
- Honeydew Melon – 1/4
- Pickled Ginger – 1 to 2 tblsp
- Coriander Leaves – 1 small bunch
For the Ginger Hoisin Dressing:
- Hoisin Sauce – 2 tblsp
- Light Soy Sauce or Fish Sauce – 3 tblsp
- Spring Onions – 1 tblsp
- Orange Juice or Liquid from Pickled Ginger – 1 tblsp
Method:
- Slice the pork into chunks and keep aside.
- Remove seeds from melons and cut into cubes.
- Mix pork slices, melon, pickled ginger and coriander sprigs in a bowl.
- Make the dressing by mixing the hoisin, soy sauce, spring onion and ginger liquid.
- Drizzle dressing over the salad and mix lightly.
- Serve.
