Roast Pork and Melon Salad Recipe

  • Cold Roast Pork or Chinese Barbecued Pork – 350 gms
  • Rock Melon – 1/4
  • Honeydew Melon – 1/4
  • Pickled Ginger – 1 to 2 tblsp
  • Coriander Leaves – 1 small bunch

For the Ginger Hoisin Dressing:

  • Hoisin Sauce – 2 tblsp
  • Light Soy Sauce or Fish Sauce – 3 tblsp
  • Spring Onions – 1 tblsp
  • Orange Juice or Liquid from Pickled Ginger – 1 tblsp


  1. Slice the pork into chunks and keep aside.
  2. Remove seeds from melons and cut into cubes.
  3. Mix pork slices, melon, pickled ginger and coriander sprigs in a bowl.
  4. Make the dressing by mixing the hoisin, soy sauce, spring onion and ginger liquid.
  5. Drizzle dressing over the salad and mix lightly.
  6. Serve.
