Ingredients:
- Iceberg Lettuce – 400 gms
- Baby Spinach Leaves – 100 gms
- Grain-mustard Vinaigrette – 2 1/2 tblsp
- Hard Boiled Eggs – 2
Method:
- Coarsely chop the lettuce.
- Mix with the spinach leaves.
- Toss with the dressing and pile onto small plates.
- Peel the eggs and separate the whites from the yolks.
- Press whites through a wire sieve and scatter over the salad.
- Then press the yolks through the sieve and scatter over the salad.
