Mimosa Salad



  • Iceberg Lettuce – 400 gms
  • Baby Spinach Leaves – 100 gms
  • Grain-mustard Vinaigrette – 2 1/2 tblsp
  • Hard Boiled Eggs – 2


  1. Coarsely chop the lettuce.
  2. Mix with the spinach leaves.
  3. Toss with the dressing and pile onto small plates.
  4. Peel the eggs and separate the whites from the yolks.
  5. Press whites through a wire sieve and scatter over the salad.
  6. Then press the yolks through the sieve and scatter over the salad.
