Ingredients:
- Fresh Beetroot – 1
- Radish – 9
- Red Cabbage – 300 gms, finely shredded
- Red Onion – 1, sliced into rings
- Raisins – 2 to 3 tblsp, chopped
- Pumpkin Seeds – 2 to 3 tblsp, roasted
- Avocado – 1, large, diced
For the Dressing:
- Light Olive Oil – 5 tblsp
- Red Wine Vinegar – 2 tblsp
- Fresh Mint – 2 tblsp, chopped
- Salt as per taste
- Ground Black Pepper
Method:
- Peel the beetroot.
- Shred them finely.
- Trim the tops and tails from the radishes and slice thinly.
- Combine the beetroot, radishes, cabbage and onion in a serving bowl.
- Scatter the chopped raisins, pumpkin seeds and avocado on top.
- Whisk together all the dressing ingredients.
- Pour over the salad.
- Serve.
