Mexican Beetroot and Red Cabbage Salad

Ingredients:

  • Fresh Beetroot – 1
  • Radish – 9
  • Red Cabbage – 300 gms, finely shredded
  • Red Onion – 1, sliced into rings
  • Raisins – 2 to 3 tblsp, chopped
  • Pumpkin Seeds – 2 to 3 tblsp, roasted
  • Avocado – 1, large, diced

For the Dressing:

  • Light Olive Oil – 5 tblsp
  • Red Wine Vinegar – 2 tblsp
  • Fresh Mint – 2 tblsp, chopped
  • Salt as per taste
  • Ground Black Pepper

Method:

  1. Peel the beetroot.
  2. Shred them finely.
  3. Trim the tops and tails from the radishes and slice thinly.
  4. Combine the beetroot, radishes, cabbage and onion in a serving bowl.
  5. Scatter the chopped raisins, pumpkin seeds and avocado on top.
  6. Whisk together all the dressing ingredients.
  7. Pour over the salad.
  8. Serve.
