Ingredients:
- Tomatoes – 3, deseeded and diced
- Red Capsicum – 1, diced
- Green Capsicum – 1, diced
- Cucumber – 1, deseeded and diced
- Onion – 1, diced
- Garlic Cloves – 1 to 2, finely chopped
- Parsley – 3 tblsp, chopped
- Mint – 2 tblsp, chopped
- Red Wine Vinegar – 1 1/2 tblsp
- Fruity Olive Oil – 1/4 cup
- Salt as per taste
- Ground Black Pepper as required
Method:
- Mix the tomatoes, capsicum, cucumber and onion in a salad bowl.
- Add garlic, parsley, mint, red wine vinegar and olive.
- Mix well.
- Season with salt and pepper.
- Cover and refrigerate for 3 to 4 hours before serving.
