Ingredients:
- Olive Oil – 1/2 cup
- Lemon Juice – 3 tblsp
- Fresh Herbs – 1 1/2 tblsp (chives, parsley or mint)
- Dijon Mustard – 1 tsp
- Fine Sugar – 1/2 tsp
- Salt
- Pepper
Method:
- Put all the ingredients in a screw-top jar and secure the lid.
- Shake vigorously until a thick emulsion forms.
- Adjust the seasoning if required.
- Use immediately or store in an airtight container in the fridge for up to 3 days.
- Always whisk or shake before using.
- Strain through a nonmetallic strainer if the herbs begin to darken.
