Herb Vinaigrette Recipe

  • Olive Oil – 1/2 cup
  • Lemon Juice – 3 tblsp
  • Fresh Herbs – 1 1/2 tblsp (chives, parsley or mint)
  • Dijon Mustard – 1 tsp
  • Fine Sugar – 1/2 tsp
  • Salt
  • Pepper


  1. Put all the ingredients in a screw-top jar and secure the lid.
  2. Shake vigorously until a thick emulsion forms.
  3. Adjust the seasoning if required.
  4. Use immediately or store in an airtight container in the fridge for up to 3 days.
  5. Always whisk or shake before using.
  6. Strain through a nonmetallic strainer if the herbs begin to darken.
