Ingredients:
- Mixed Baby Salad Leaves – 200 gms
- Mixed Fresh Herbs – 4 tblsp, chopped (like parsley, mint, cilantro, basil)
For the Dressing:
- Extra Virgin Olive Oil – 4 tblsp
- Juice of 1/2 Lemon
- Garlic Clove – 1, crushed
- Salt and Pepper
Method:
- Wash the salad leaves.
- Discard any thick stems.
- Pat dry and put them in a salad bowl.
- Add the chopped herbs.
- To make the dressing, whisk together the olive oil, lemon juice, garlic, salt and pepper in a small bowl.
- Just before serving, whisk the dressing and pour over the salad leaves.
- Toss and Serve.
