Salad of Greens with Lemon Dressing Recipe

  • Mixed Baby Salad Leaves – 200 gms
  • Mixed Fresh Herbs – 4 tblsp, chopped (like parsley, mint, cilantro, basil)

For the Dressing:

  • Extra Virgin Olive Oil – 4 tblsp
  • Juice of 1/2 Lemon
  • Garlic Clove – 1, crushed
  • Salt and Pepper


  1. Wash the salad leaves.
  2. Discard any thick stems.
  3. Pat dry and put them in a salad bowl.
  4. Add the chopped herbs.
  5. To make the dressing, whisk together the olive oil, lemon juice, garlic, salt and pepper in a small bowl.
  6. Just before serving, whisk the dressing and pour over the salad leaves.
  7. Toss and Serve.
