- Place the apples in a bowl with the lemon juice and 1 tblsp of mayonnaise.
- Leave for 40 minutes or until required.
- Slice the celery very thinly.
- Add the celery with the shallots, garlic and walnuts to the apple.
- Mix and then add the remaining mayonnaise and blend thoroughly.
- Add the chicken and mix with the other ingredients.
- Line a serving dish with the lettuce.
- Pile the chicken salad into a serving bowl.
- Sprinkle with pepper.
- Garnish with chopped walnuts.
