Ingredients
- Broiler Chicken – 1 whole, roasted
- Unsweetened Coconut Milk – 1/2 can
- Curry Powder – 2 tsp
- Lemon Juice – 1 cup
- Fish Sauce – 1 tsp
- Garlic – 3 cloves, minced
- Coriander Leaves – 1/4 cup
- Brown Sugar – 2 tsp
- Red Lettuce Leaves – 8
- Green Lettuce Leaves – 1 bunch, shredded
- Red Bell Pepper – 1, large, shredded
- Mint Leaves – 1/4 cup
- Peanut – 1/4 cup, finely chopped
For the Sweet and Sour Dressing:
Mix Chilli paste, Red Wine Vinegar, Tomato Sauce and Salt
Method:
- Mix the roast chicken, which is cut into small dices along with all the ingredients.
- Add the sweet and sour dressing then serve it in a salad plate.
