Red Pepper and Radicchio Salad

Ingredients:

  • Red Peppers – 2
  • Radicchio – 1 head, separated into leaves
  • Whole Beetroot – 4, cooked and cut into matchsticks
  • Radishes – 12, sliced
  • Spring Onions – 4, finely chopped
  • Basic Salad Dressing – 4 tblsp
  • Crusty Bread to serve, fresh

Method:

  1. Core and deseed the peppers and cut into rounds.
  2. Arrange the radicchio leaves in a salad bowl.
  3. Add the pepper, beetroot, radishes and spring onions.
  4. Drizzle with the dressing and serve with crusty bread.
