- Red Peppers – 2
- Radicchio – 1 head, separated into leaves
- Whole Beetroot – 4, cooked and cut into matchsticks
- Radishes – 12, sliced
- Spring Onions – 4, finely chopped
- Basic Salad Dressing – 4 tblsp
- Crusty Bread to serve, fresh
- Core and deseed the peppers and cut into rounds.
- Arrange the radicchio leaves in a salad bowl.
- Add the pepper, beetroot, radishes and spring onions.
- Drizzle with the dressing and serve with crusty bread.
