Ingredients:
- Dried Penne Pasta – 350 gms
- Pesto Sauce – 2 tblsp
- Olive Oil – 3 tblsp
- Orange Pepper – 1, deseeded and diced
- Yellow Pepper – 1, deseeded and diced
- Red Onion – 1, finely diced
- Black Olives – 85 gms, stoned
- Cherry Tomatoes – 115 gms, halved
- Milano Salami – 175 gms, cut into small chunks
- Mozzarella Cheese – 125 gms, torn into small pieces
- Salt and Pepper – as required
- Fresh Basil Sprigs – to garnish
Method:
- Bring a large saucepan of lightly salted water to the boil.
- Add the pasta and return to the boil.
- Cook for 10-12 minutes until just tender.
- Drain the pasta well and transfer to a bowl. Mix together the pesto sauce and olive oil and stir into the hot pasta.
- Leave to cool, stirring occasionally.
- Add the peppers, onion, olives, tomatoes, salami and mozzarella cheese to the pasta and toss well to mix.
- Season to taste with salt and pepper.
- Serve garnished with the basil sprigs.
