carrot kheer - Carrot Kheer

Ingredients:
Carrot – 50 gms, grated
Carrot Puree – 1 cup
Milk – 2 cups
Sugar – 1 cup
Rose Water – 2 tsp
Cardamom Powder – 1 tsp
Cashewnuts – few
Raisins – few
Ghee – 1/4 cup

Method:
1. Combine the milk, carrot puree and grated carrot in a pan.
2. Gently bring to a boil.
3. Add sugar, cardamom powder and stir well.
4. Heat little ghee in a pan.
5. Fry the cashewnuts and raisins.
6. Add to the kheer and mix well.
7. Add rose water and remove from flame.
8. Cool and serve.
