Vietnamese Noodle Salad

Vietnamese Noodle Salad
Ingredients:
Rice Noodles – 100 gms
Lime Juice – 1/8 cup
Vegetable Oil – 1/8 cup
Dark Sesame Oil – 1 tblsp
Chilli Paste – 1/2 tsp
Coriander Leaves – 3 tblsp, chopped
Cucumber – 1/2 cup, peeled, chopped
Carrot – 1/4 cup, peeled, chopped
Small Onions – 1/2 cup, chopped
Tofu – 50 gms, cubed
Peanuts – fried, to garnish

Method:
1. Cook the noodles in a large pan of salted water till tender.
2. Drain, rinse under cold running water and drain again.
3. Combine all the other ingredients, except peanuts, in a large bowl.
4. Mix well and add the noodles.
5. Gently mix again and garnish with peanuts.
6. Serve.
