Ingredients:
Pineapple – 1 cup, chopped
Basmati Rice – 2 cups
Tofu – 100 gms, cubed
Soy Sauce – 1 tblsp
Dark Sesame Oil – 1/2 tsp
Sunflower or Vegetable Oil – 2 tblsp
Garlic – 2, small cloves, crushed
Ginger – 1/2 tblsp, peeled, grated
Red Capsicum – 1, small, chopped
Celery – 1/4 cup, chopped
Small Onions – 1, finely chopped
Cashewnuts – few, fried
Method:
1. Heat vegetable oil in a pan over moderate flame.
2. Combine the tofu with soy sauce and sesame oil. Keep aside.
3. Stir-fry the ginger and garlic for 30 seconds.
4. Add the capsicums, celery, onions and tofu.
5. Cook for 4 to 5 minutes.
6. Add the pineapple chunks and basmati rice.
7. Cook for 2 minutes or till rice is hot.
8. Garnish with cashewnuts.
9. Serve hot.
