Ingredients:
Rice – 1 cup, cooked
Mint Leaves – 1 bunch, chopped
Onion – 1, chopped
Peas – 1/4 cup, shelled
Asafoetida Powder – 1/8 tsp
Carrots – 1, chopped
Cashews – 1/2 tsp
Oil – 1/2 tblsp
Salt as per taste
Mustard Seeds – 1/2 tsp
Sambar Powder – 1/2 tsp
Turmeric Powder – 1/2 tsp
Method:
1. Heat oil in a frying pan.
2. Fry the mustard seeds till it starts to splutter.
3. Add the cashewnuts and asafoetida powder.
4. Fry for a minute or two.
5. Add the onions and after a minute add the mint leaves, carrots and peas.
6. Add turmeric powder, sambar powder and salt.
7. Pour 1/2 cup of water and cook till the water dries up and the vegetables are cooked.
8. Keep aside to cool.
9. Now mix this with the rice and serve warm.
