Ingredients:
Shrimps – 110 gms, peeled, deveined
Rice – 2 cups, cooked
Garlic – 2 tsp, coarsely chopped
Onion – 1/4 cup, chopped
Pineapple – 1/2 cup, finely chopped
Spring Onions – 1 tblsp, finely sliced
Fish Sauce – 1 tblsp
Sugar – 1/4 tsp
Oil – 1 tblsp
Method:
1. Heat oil in a pan over high heat.
2. Stir-fry the garlic and onions for 45 seconds.
3. Add the shrimps and cook for a minute or two.
4. Now add the rice, fish sauce and sugar.
5. Mix well.
6. Add the pineapple and spring onions.
7. Cook for a minute or two, stirring frequently.
8. Transfer to a serving plate.
9. Serve warm.
