Fried Capsicum Sandwich


Fried Capsicum Sandwich
Sandwich Bread Slices – 8 to 10, toasted
Capsicum – 1, finely chopped
Carrot – 2 tblsp, finely grated
Onion – 2, finely chopped
Salt as per taste

1. Heat ghee in a pan over low-medium flame.
2. Stir-fry the onions, capsicum and carrot for a minute or two.
3. Add salt and mix well.
4. Spread butter on one bread slice and place 1 to 2 tblsp of the vegetable mixture in the centre.
5. Place another buttered bread slice on top.
6. Serve with ketchup.
