Pasta Rice – 250 gms, cooked as per package instructions
Cherry Tomatoes – 125 gms, halved
Cucumber – 1/2, deseeded, diced
Mozzarella Cheese – 125 gms, cubed
Spring Onions – few, finely chopped
Black Olives – 100 gms, pitted, halved
Coriander Leaves – 1/2 cup
Olive Oil – 1/3 cup
Lemon Juice – 3 tblsp
Garlic – 1 clove, crushed
Salt as per taste
Black Pepper Powder as per taste
1. Drain the pasta rice and rinse well under cold running water.
2. Combine all the dressing ingredients and mix well.
3. In a bowl, combine the pasta rice with the remaining ingredients.
4. Pour over the dressing.
5. Toss well and serve.
