Ingredients:
Chicken Breasts – 250 to 300 gms, cooked, cubed
Onion – 1/4, finely chopped
Celery – 1 stalk, finely chopped
Capsicum – 1/8 cup, roasted, finely chopped
Pistachios – 1/8 cup, roughly chopped
Low-fat Mayonnaise – 1/4 cup
White Wine Vinegar – 1/2 tblsp
Salt – 1/4 tsp or as per taste
Black Pepper – 1/4 tsp
Method:
1. Mix the mayonnaise, vinegar, salt and black pepper in a bowl.
2. Add the remaining ingredients and toss well to coat.
3. Serve.
