Konkani Mixed Vegetable Curry

Konkani Mixed Vegetable Curry
String Beans – 100 gms, trimmed, stringed, cut into small pieces
Red Pumpkin – 100 gms
Ash Gourd – 100 gms
Potato – 2 small or 1 medium
Colocasia – 100 gms
Cashewnuts – 5 tblsp, split
Green Chillies – 12 to 15, slit
Salt – 2 tsp
Coconut Milk – 2 cups thin + 1 cup thick
Coconut Oil – 3 tblsp
Asafoetida Powder – 1/4 tsp

1. Chop all the vegetables into small pieces.
2. Add all the vegetables, cashewnuts, green chillies, thin coconut milk and salt in a pan.
3. Cook over high heat till tender.
4. Reduce heat and pour the thick coconut milk.
5. Simmer for 2 to 5 minutes.
6. Add oil and asafoetida powder.
7. Mix well and serve with rice.
