Creamed Spinach
Spinach – 1 bunch, chopped, washed
Olive Oil – 2 tsp
Small Onions – 2, finely chopped
Maida – 4 tsp
Milk – 1 1/2 cups
Vegetable Broth – 1/2 cup
Unsweetened Condensed Milk – 2 tblsp
Nutmeg – a pinch, ground
Black Pepper Powder

1. Squeeze and dry the spinach leaves.
2. Heat oil in a pan over medium heat.
3. Fry the small onions and cook for 2 minutes.
4. Add maida and cook for 30 seconds.
5. Keep stirring from time to time.
6. Add milk and broth.
7. Allow it to simmer and cook for 2 minutes.
8. Add the spinach and simmer until tender, around 5 minutes.
9. Add the condensed milk and nutmeg.
10. Add salt and pepper.
11. Remove to a serving bowl and serve.
